Make fresh noodles in your noodles making machine and boil it in water. When almost done, strain the water, add a teaspoon of olive oil, toss and keep aside. In a hot wok, stir-fry garlic, julienne ginger, sliced onions, bell peppers, carrot and cabbage in olive oil. Add 2 tbsp. soy sauce and 1tbsp of vinegar. Add the drained noodles to it. Toss and serve. You can adjust the vegetable quantity as per your preference.
Rainbow Vegetarian Pad Thai with Peanuts and Basil
Making Pad Thai noodles is super easy and fun. While your noodle maker is making fresh noodles, you can cut or spiralize 1 zucchini, 2 carrots and half yellow onion in thin strips. Also, coarsely grind 1/2 cup peanuts, and chop 1/2 cup fresh herbs, including basil, cilantro and green onions. Make a sauce by adding 3 tablespoons each of vegan fish sauce, brown sugar and vegetable broth. Add 2 tablespoons white vinegar to it, 1 Tbsp of soy sauce and 1 tsp of chilli paste.
In a pan add a Tbsp of oil and stir fry veggies over high heat for 2-3 minutes. Add boiled and strained noodles to it. Add the prepared sauce, give it a stir and add peanuts and herbs to it.

Make vegetable stock using carrots, cabbage, celery, or any other vegetable that you want. Just add the vegetables to 2 litres of water and let it simmer for 2-3 hours. You can then drain and store it. Make fresh noodles in a noodles making machine and boil it till cooked in water. Drain and keep aside. In a deep pot, add a spoon of oil and stir small pieces of onion, garlic, carrot, cabbage and green pepper in it for a minute or so. Add the prepared stock. Let it come to a boil and then add 1tsp of soya sauce, 1 tsp vinegar, black pepper and salt to it. Adjust the seasoning as per your taste. Place the noodles in the soup bowl and pour this over it. Serve it warm and it will soothe your throat besides being tasty.
