About Chef VimalDhar

Starting with Lake Palace in 1997 for almost 16 years as the head chef, he moved on to work in the same domain in Barcelona, Brazil. Later he returned to team up at Devigarh Palace, Udaipur.

After serving as the Corporate Chef for all twelve properties of Shriji Arvind Singh Mewar in Rajasthan, Chef Dhar moved on to form Udaipuri – A Vegetarian Kitchen in the year 2011, which is one of the hot-spot vegetarian restaurant in the city. He later brought Jaisingh Garh Palace (2013) and Kabab Mistri (2014) into the picture.

All three of his brands now are the primary part of Innovating Hospitality banner. Chef Dhar holds the distinction of having been featured in The Wall Street Journal, USA magazine by Stan Sessor and in the Discovery Channel by Tony Bourdain, featured on Travel & Living Channel.

He was also featured among 50 Chefs handpicked globally by celebrity photographer Melanie Dunea for her latest coffee table book My Last Supper.

  • He was invited to do an Indian food festival in Melbourne at The Crown in Feb 2008. Churned out the a la carte with Indian delicacies, terrace theme buffets and cooking classes.
  • He holds merit of hosting a Kashmiri food demo and dinner for Tony Bourdain and his crew at his residence which has featured in Discovery Channel by Tony Bourdain in Travel & Leisure series’ 2006.
  • He was also featured in the Panorama Sahara times by Sharmila Chand – a recipe ‘Olive tapenade covered betki with spinach ratatouille, steamed morels and orange reduction’.
