Quinoa is actually a seed prepared like a whole grain similar to rice or wheat. It takes less time to cook. Quinoa (pronounced as keen-waah) has the highest of protein content among all whole grains and has all nine amino acids which make it a complete protein.

Udaipur is soon to have quinoa processing units for which agricultural department has entered into an agreement with a private company. As per reports, this agreement will prove to be beneficial for farmers as it will increase their income to a great extent. As informed by Agricultural Minister Prabhu Lal Saini, farmers were facing problems since there was no processing unit for quinoa until now. Now that processing units will be set up, farmers will rejoice with increased income.

An official data states that quinoa is being cultivated on 3300 hectares in 11 districts including Bhilwara, Jalore, Bikaner and Udaipur. 10000 farmers are involved in quinoa cultivation.
